450 g (1 lb) beefsteak fungus
4 cloves garlic

This is a really 5-star dish; definitely one of my favourite mushroom recipes.
Clean and cut the beefsteak fungus into fine slices and place in a frying pan with finely chopped shallots and garlic. Barely cover with water and simmer for 10 minutes. Add pepper, salt, thyme and a generous knob of butter and cook until the liquid has reduced to a thick sauce.
