Caesar's Treat
450 g (1 lb) Caesar's mushrooms
2 cloves of garlic, parsley
Olive oil, butter
Pepper and salt


Caesar's Mushroom Amanita Caesarea scop ex Fr. This is a Mediterranean species. I was lucky enough to find this prize collection in an oak wood in southern France. Do not confuse this mushroom with the much redder-coloured fly agaric Amanita muscaria or with the similar looking Amanita species of north America.

Cut away the bulbous stem end, clean and chop the mushrooms. Fry them gently in oil and a little butter. After 5 minutes add chopped parsley and finely chopped garlic. Flavour with pepper and salt. Cook rapidly for a further 2 minutes and serve on French packet toast.
